All The Veggie Quinoa

We have decided to begin sharing some of our favorite recipes. Today’s Recipe: All the Veggie Quinoa.

The recipes we will begin to share are feel good recipes as well as recipes that will help you continue any cleanse you may be on. During the pandemic, our oldest daughter, Samantha, rediscovered her joy for cooking and she would be constantly trying new recipes and sending to us. If you follow us on instagram, you’ll remember that we recently shared one of her dishes, our followers seemed to love it!

All the Veggie Quinoa
Have you ever opened your fridge and had a bunch of veggies that are about a few days away from spoiling? Maybe you’re looking for a way to eat more vegetables and feel full and satisfied. We know this recipe is the perfect thing to just throw a bunch of ingredients in one pan and serve it as a side for dinner, a main dish for lunch, or for breakfast topped with a sunny side up egg! The quinoa and beans offers a great source of protein while all the veggies provides lots of nutritious fiber. Spice it up and top with your favorite hot sauce or mix with fresh spinach to turn into a salad.

Non negotiable- the quinoa and (some form of beans), ginger, garlic, onion (shallots or leek work too!) and carrots; the rest, use whatever you have available in your fridge, freezer or pantry at the time.
-1 can of chickpeas
-1 can of kidney beans
-1/2 white onion diced
-1/2 cup of carrots
-2 garlic cloves
-1 piece of fresh ginger
-1 cup of quinoa
-1 corn
-1/2 cup of mushrooms
-Handful of roasted asparagus
-Fresh parsley

Chop the fresh ginger and garlic finely and saute with onion and carrots until fragrant on medium high heat. Simultaneously, Roast asparagus with olive oil, sea salt and pepper in oven at 400 degrees. While the asparagus is roasting, Add both beans (rinsed) and corn to the onion and carrot mixture and allow to cook for 5 minutes. Lower the heat to medium low, and stir in your cooked quinoa. Allow all of the flavors to combine. Mix in roasted asparagus. Finish by topping with your fresh chopped parsley (or herb of choice).
